Chickpea and Zucchini Pasta with Creamy Tomato Sauce
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 zucchini, diced
- 2 tomatoes, diced
- 1 apple, diced
- 1 banana, sliced
- 1/2 cup of cream
- 8 oz of pasta
- 1/2 cup of orange juice
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat some olive oil over medium heat. Add the diced zucchini and cook until slightly browned.
3. Add the diced tomatoes and cook until they start to soften.
4. Stir in the chickpeas and cook for a few more minutes.
5. Pour in the cream and orange juice, stirring to combine. Let it simmer for a few minutes.
6. Add the cooked pasta to the skillet and toss to coat in the creamy tomato sauce.
7. Serve the pasta topped with diced apple and sliced banana.
