Make Chickpea Broccoli Fritters
Recipe: Chickpea Broccoli Fritters
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 cup cooked brown rice
- 1 cup steamed broccoli, chopped
- 2 eggs
- 1/4 cup milk
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
Instructions:
1. In a food processor, combine chickpeas, brown rice, and broccoli. Pulse until mixture is combined but still slightly chunky.
2. Transfer mixture to a mixing bowl and add eggs and milk. Stir well to combine.
3. In a separate bowl, whisk together whole wheat flour, baking powder, and salt.
4. Gradually add the dry ingredients to the chickpea mixture, stirring until well combined.
5. Heat a non-stick skillet over medium heat and lightly grease with oil.
6. Scoop about 1/4 cup of the mixture onto the skillet to form fritters. Flatten slightly with a spatula.
7. Cook fritters for 3-4 minutes on each side, or until golden brown and cooked through.
