Chickpea Broccoli Salad

Ingredients:

-1 can of chickpeas, drained and rinsed
-1 head of broccoli, chopped
-1/2 red onion, diced
-1 red pepper, diced
-1/2 cup of sliced almonds
-1/4 cup of olive oil
-2 cloves of garlic, minced
-2 tablespoons of balsamic vinegar
-2 tablespoons of mustard
-1 tablespoon of tahini
-1 lemon, juiced
-1/2 cup of shredded red cabbage
-1/2 cup of shredded white cabbage
-1/4 cup of sliced olives
-2 hard boiled eggs, diced
-4 slices of bread, toasted

Instructions:

1. Preheat oven to 350°F.

2. Spread almonds onto a baking sheet and bake for 8-10 minutes, or until golden brown.

3. In a large bowl, combine chickpeas, broccoli, red onion, red pepper, almonds, olive oil, garlic, balsamic vinegar, mustard, tahini, lemon juice, red cabbage, white cabbage, and olives.

4. Mix until all ingredients are evenly distributed.

5. Divide the salad onto four plates and top each plate with a hard boiled egg and two slices of toasted bread.

6. Serve and enjoy!
