Chickpea Rice Cakes

Ingredients:

- 1 cup cooked rice
- 1 egg
- 2 tablespoons corn flour
- 1/2 cup cooked chickpeas

Instructions:

1. In a medium bowl, mash the cooked chickpeas with a fork until they are mostly broken down.

2. Add the cooked rice, egg, and corn flour to the bowl and mix until everything is combined.

3. Heat a non-stick pan over medium heat.

4. Scoop 1/4 cup of the mixture into the pan and flatten it into a patty.

5. Cook for 3-4 minutes on each side, or until golden brown.

6. Serve warm with your favorite toppings. Enjoy!
