Chile Chicken Fried Rice

Ingredients:

- 2 cups cooked white rice
- 1 cup cooked, diced chicken
- 1/2 cup diced green chiles
- 2 eggs, lightly beaten
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken and chiles and cook for 3-4 minutes, stirring occasionally.

3. Add the cooked rice and stir to combine.

4. Push the rice mixture to the sides of the skillet and pour the beaten eggs into the center.

5. Scramble the eggs until cooked through, then stir into the rice mixture.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
