Oaxacan Pork Belly Tamarind Tacos

Ingredients:

-1/2 cup blue corn flour
-2 tablespoons butter
-1/2 cup Oaxaca cheese, grated
-1/4 cup water
-1/4 cup milk
-1/2 pound pork belly, cut into cubes
-1 avocado, diced
-2 tablespoons tamarind paste
-1 tablespoon sugar
-2 tablespoons soy sauce
-1 tablespoon rice wine vinegar
-1 guijillo chili, finely chopped

Instructions:

1. Preheat oven to 350 degrees F.

2. In a medium bowl, mix together the blue corn flour, butter, Oaxaca cheese, water, and milk until a thick paste forms.

3. Spread the paste onto a baking sheet lined with parchment paper. Bake for 15 minutes, or until the paste is golden brown.

4. Meanwhile, heat a large skillet over medium-high heat. Add the pork belly cubes and cook until golden brown, about 8 minutes.

5. Add the avocado, tamarind paste, sugar, soy sauce, rice wine vinegar, and guijillo chili to the skillet and cook for an additional 5 minutes.

6. To assemble the tacos, spread a spoonful of the pork belly mixture onto each of the blue corn flour shells. Top with the Oaxacan cheese and bake for an additional 5 minutes.

7. Serve the tacos warm with your favorite toppings. Enjoy!
