Chili-Lime Chicken Skewers
Ingredients:
- 2 yellow peppers, cut into 1-inch cubes
- 2 red peppers, cut into 1-inch cubes
- 1 lb. chicken breast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a medium bowl, combine the olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper.
3. Add the chicken cubes to the bowl and toss to coat.
4. Thread the chicken cubes and peppers onto skewers, alternating between the two.
5. Grill the skewers for 8-10 minutes, flipping once, until the chicken is cooked through and the peppers are lightly charred.
6. Serve the skewers with your favorite sides and enjoy!
