Chili Pepper Rice and Potato Bowl
Ingredients:
-1 cup uncooked white rice
-1 large potato, peeled and diced
-1 small chili pepper, diced
-2 tablespoons olive oil
-Salt and pepper, to taste
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, stir, and reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is cooked.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the diced potato and cook for 5 minutes, stirring occasionally.
3. Add the chili pepper and cook for an additional 3 minutes, stirring occasionally.
4. Add the cooked rice to the skillet and stir to combine. Season with salt and pepper, to taste.
5. Serve the chili pepper rice and potato bowl warm. Enjoy!
