Chilli Beef and Potato Stew
Ingredients:
- 1 tablespoon of olive oil
- 1 large diced onion
- 2 cloves of minced garlic
- 1 large diced carrot
- 1 large diced tomato
- 500g diced beef
- 1 teaspoon of chilli powder
- 1 teaspoon of paprika
- 2 large diced potatoes
- 500ml of beef stock
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the carrot, tomato, beef, chilli powder and paprika and cook for a further 5 minutes.
4. Add the potatoes and beef stock and bring to a boil.
5. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
6. Add salt and pepper to taste.
7. Serve hot with your favourite sides. Enjoy!
