Chilli Beef and Rice


- 500g ground beef
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 fresh chilli, finely chopped
- 1 large potato, diced
- 1 tomato, diced
- 1 cup of uncooked rice
- 1 teaspoon of normal spices (e.g. paprika, cumin, oregano, etc.)
- 2 tablespoons of olive oil
- Salt and pepper to taste


1. Heat the olive oil in a large pan over medium-high heat.

2. Add the onion and garlic and cook for 2-3 minutes until softened.

3. Add the ground beef and cook for 5-7 minutes, stirring occasionally, until the beef is browned.

4. Add the chilli, potato, tomato, spices, salt and pepper and cook for a further 5 minutes until the vegetables are softened.

5. Add the uncooked rice and stir to combine.

6. Pour in 2 cups of water and bring to a boil.

7. Reduce the heat to low and cover the pan. Simmer for 15-20 minutes until the rice is cooked and the liquid has been absorbed.

8. Serve hot. Enjoy!
