Make Chilli Chicken and Basmati Rice
Chilli Chicken and Basmati Rice
Ingredients:
- 2 cups of basmati rice
- 2 chicken breasts, diced
- 1 red chilli, finely chopped
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried oregano
- Salt and pepper, to taste
- 2 tablespoons of fresh parsley, finely chopped
Instructions:
1. Cook the basmati rice according to package instructions.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the diced chicken and cook until it is golden brown and cooked through.
4. Add the garlic, chilli, cumin, smoked paprika, oregano, salt and pepper. Cook for 1 minute.
5. Add the cooked basmati rice and stir to combine.
6. Cook for an additional 2-3 minutes until everything is heated through.
7. Garnish with fresh parsley and serve. Enjoy!
