Chilli Chicken and Rice
Ingredients:
- 2 tablespoons of oil
- 2 tablespoons of butter
- 2 chicken breasts, cut into cubes
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- 1 chilli, diced
- 1 cup of long grain rice
- 2 cups of chicken broth
- 1 cup of shredded cheese
Instructions:
1. Heat the oil and butter in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion, garlic, Italian seasoning, and chilli and cook until the vegetables are softened, about 5 minutes.
4. Add the rice and stir to combine.
5. Pour in the chicken broth and bring to a boil.
6. Reduce the heat to low, cover the skillet, and simmer for 15 minutes.
7. Remove the lid and stir in the cheese.
8. Cover and cook for an additional 5 minutes, or until the rice is cooked through.
9. Serve and enjoy!
