Make Chilli Chicken and Rice
Chilli Chicken and Rice
Ingredients:
- 2 cups of uncooked white rice
- 2 tablespoons of olive oil
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red chilli pepper, seeded and diced
- 1 teaspoon of garlic powder
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- Salt and pepper, to taste
- 2 cups of chicken broth
- 1/2 cup of frozen corn
- 1/2 cup of black beans, drained and rinsed
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and season with garlic powder, cumin, smoked paprika, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 8 minutes.
3. Add the diced chilli pepper and cook for an additional 2 minutes.
4. Add the uncooked rice, chicken broth, corn, and black beans to the skillet. Stir to combine.
5. Bring the mixture to a boil, reduce the heat to low, and cover. Simmer for 20 minutes, or until the rice is cooked through and all the liquid has been absorbed.
6. Serve the chilli chicken and rice hot. Enjoy!
