Chilli Prawn and Tomato Penne
Ingredients:
- 500g prawns, peeled and deveined
- 500g penne pasta
- 1 red chilli, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 large tomatoes, diced
- 1/2 cup ligunie
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the penne and cook until al dente, about 8 minutes. Drain and set aside.
2. Heat the olive oil in a large skillet over medium-high heat. Add the prawns, garlic and chilli and cook for 3 minutes, stirring occasionally.
3. Add the tomatoes and ligunie and cook for another 3 minutes.
4. Add the cooked penne to the skillet and stir to combine. Season with salt and pepper to taste.
5. Serve the chilli prawn and tomato penne hot. Enjoy!
