Chilli Rice and Potato

Ingredients:

- 1 onion, diced
- 2 cloves garlic, minced
- 1 red pepper, diced
- 1 large tomato, diced
- 1 teaspoon salt
- 1 cup uncooked white rice
- 2 potatoes, diced
- 1 chilli, diced

Instructions:

1. Heat a large saucepan over medium heat and add the onion, garlic, and pepper. Cook for 5 minutes, stirring occasionally.

2. Add the tomato, salt, and rice and stir to combine.

3. Add the potatoes and chilli and stir to combine.

4. Add 2 cups of water and bring the mixture to a boil.

5. Reduce the heat to low and simmer, covered, for 20 minutes or until the rice is cooked and the potatoes are tender.

6. Serve hot and enjoy!
