Ingredients:
- 2 cups cooked white rice
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional: diced chicken, shrimp, or tofu for protein
Step by Step Guide:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
3. In the same skillet, add a little more oil if needed and sauté garlic until fragrant.
4. Add diced carrots and cook until slightly softened, about 2-3 minutes.
5. Add frozen peas and cook for another 2 minutes.
6. Stir in cooked rice and break up any clumps with a spatula.
7. Pour soy sauce and sesame oil over the rice, and mix well to combine.
8. Add the scrambled eggs back into the skillet and toss everything together.
9. Season with salt and pepper to taste.
