Chinese-Style Braised Beef and Potatoes

Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, minced
- 2 tablespoons Chinese five-spice powder
- 2 tablespoons soy sauce
- 2 tablespoons rice wine or dry sherry
- 1 teaspoon sugar
- 2 cups beef broth
- 2 pounds potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons cornstarch
- 2 tablespoons cold water

Instructions:

1. Heat the oil in a large pot over medium-high heat. Add the beef cubes and cook, stirring occasionally, until lightly browned, about 5 minutes.

2. Add the onion, garlic, and ginger and cook, stirring, until the onion is softened, about 3 minutes.

3. Add the five-spice powder, soy sauce, rice wine, and sugar and stir to combine.

4. Add the beef broth and bring to a boil. Reduce the heat to low and simmer, covered, for 1 hour.

5. Add the potatoes and simmer, covered, until the potatoes are tender, about 30 minutes.

6. In a small bowl, whisk together the cornstarch and cold water until smooth.

7. Slowly add the cornstarch mixture to the pot and stir to combine. Simmer until the sauce has thickened, about 5 minutes.

8. Serve hot. Enjoy!
