Chinese Yellow Curry with Chicken, Bell Peppers, and Mushrooms
Ingredients:
- 2 tablespoons vegetable oil
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons Chinese yellow curry paste
- 1 red bell pepper, cut into 1-inch cubes
- 1 green bell pepper, cut into 1-inch cubes
- 1 cup sliced mushrooms
- 1 can (14 ounces) coconut milk
- 1 teaspoon sugar
- 2 tablespoons fish sauce
- 2 tablespoons freshly squeezed lime juice
- 1/4 cup chopped fresh cilantro
Instructions:
1. Heat the oil in a large skillet over medium-high heat. Add the chicken cubes and cook until lightly browned, about 5 minutes.
2. Add the curry paste and stir to combine. Cook for 1 minute, stirring constantly.
3. Add the bell peppers and mushrooms and cook for 3 minutes, stirring occasionally.
4. Add the coconut milk, sugar, fish sauce, and lime juice. Bring to a simmer and cook for 10 minutes, stirring occasionally.
5. Add the cilantro and stir to combine. Serve over cooked rice. Enjoy!
