Chipotle Beef Burrito Bowl

Ingredients:

- 1 lb ground beef
- 2 tablespoons flour
- 1 cup milk
- 2 eggs
- 1/2 cup cream
- 1 cup shredded cheddar cheese
- 1 package frozen french fries
- 1 can diced tomatoes
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 onion, diced
- 1 shallot, diced
- 2 tablespoons chopped parsley
- 1 teaspoon thyme
- 2 bay leaves
- 6 corn tortillas
- 2 chipotle peppers in adobo sauce, minced
- 1 can refried beans
- 1 can black beans
- 1 can kidney beans
- 2 cups cooked rice

Instructions:

1. Preheat oven to 375°F.

2. In a large skillet over medium-high heat, cook ground beef until browned. Drain off any excess fat.

3. Add flour to the skillet and cook for 1 minute.

4. Slowly add the milk and stir until thickened.

5. In a separate bowl, whisk together the eggs and cream.

6. Pour the egg mixture into the skillet and stir until combined.

7. Add the cheddar cheese, frozen french fries, canned tomatoes, bell pepper, garlic, onion, shallot, parsley, thyme, and bay leaves.

8. Simmer for 10 minutes, stirring occasionally.

9. Place the corn tortillas on a baking sheet and bake for 10 minutes.

10. In a separate skillet, heat the chipotle peppers in adobo sauce.

11. Add the refried beans, black beans, and kidney beans to the skillet and cook for 5 minutes.

12. To assemble the burrito bowls, divide the cooked rice among four bowls.

13. Top each bowl with the beef mixture, beans, and chipotle peppers.

14. Serve with the baked tortillas. Enjoy!
