Choclo Huevos Rancheros
Ingredients:
- 2 large huevos
- 1/2 cup of cooked choclo
- 1/4 cup of diced palta
- 1/4 cup of diced palmitos
- 1/4 cup of salsa
- 1/4 cup of shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. In a medium bowl, combine the cooked choclo, palta, palmitos, salsa, and shredded cheese. Mix until all ingredients are evenly distributed.
3. Grease a baking dish with oil or butter and pour the choclo mixture into the dish.
4. Gently crack the huevos over the choclo mixture.
5. Sprinkle with salt and pepper to taste.
6. Bake in preheated oven for 15-20 minutes, or until the huevos are cooked through.
7. Serve warm and enjoy!
