Chocolate Chia Almond Muffins

Ingredients:

- 2 cups almond flour
- 1/4 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 2 eggs
- 1/4 cup chia seeds
- 1/2 cup water

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, mix together almond flour, cocoa powder, baking powder, cinnamon, and ginger.

3. In a separate bowl, whisk together eggs, chia seeds, and water.

4. Add wet ingredients to dry ingredients and mix until just combined.

5. Grease a muffin tin with cooking spray or line with paper liners.

6. Divide batter evenly among the muffin cups.

7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Allow muffins to cool before serving. Enjoy!
