Chocolate Chip Pancakes with Almonds and Lime
Ingredients:
2 cups pancake mix
2 eggs
1 cup milk
2 tablespoons sugar
1/2 cup chocolate chips
1/4 cup diced almonds
1/4 teaspoon salt
2 tablespoons honey
1 tablespoon lime juice
2 tablespoons sprinkles
Instructions:
1. In a large bowl, whisk together the pancake mix, eggs, milk, sugar, salt, and lime juice until combined.
2. Stir in the chocolate chips, diced almonds, and sprinkles until evenly distributed.
3. Heat a large skillet over medium heat and grease with butter or oil.
4. Using a 1/4 cup measuring cup, scoop out the batter and pour onto the skillet.
5. Cook for 2-3 minutes, until the edges start to look dry and the bottom is golden brown.
6. Flip the pancake and cook for an additional 1-2 minutes.
7. Transfer to a plate and repeat with remaining batter.
8. Serve with honey and extra lime juice, if desired. Enjoy!
