Chocolate-Lemon Chicken with Feta and Bacon-Roasted Potatoes
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons butter, melted
- 2 tablespoons dark chocolate chips
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
- 2 large potatoes, cut into cubes
- 4 slices bacon, chopped
- 1/2 cup crumbled feta cheese
Instructions:
1. Preheat oven to 375°F.
2. In a small bowl, combine melted butter, chocolate chips, lemon juice, olive oil, garlic, parsley, salt, and pepper.
3. Place chicken breasts in a shallow baking dish and pour the butter-chocolate mixture over the chicken. Turn to coat.
4. In a separate bowl, combine potatoes, bacon, and feta cheese. Pour into a greased baking dish and spread out evenly.
5. Place both baking dishes in the preheated oven and bake for 25-30 minutes, or until chicken is cooked through and potatoes are golden brown.
6. Serve the chicken and potatoes with a side of your favorite vegetables. Enjoy!
