Chocolate Orange Spelta Oat Cookies

Ingredients:

- 1 cup spelta flour
- 1 cup rolled oats
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup chopped dried orange slices

Instructions:

1. Preheat oven to 350°F. Line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the spelta flour, oats, cocoa powder, baking powder, baking soda, and salt.

3. In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold in the chocolate chips and orange slices.

6. Drop the dough by rounded tablespoonfuls onto the prepared baking sheets, leaving about 2 inches between each cookie.

7. Bake for 10-12 minutes, or until the edges are set and the tops are just beginning to crack.

8. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
