Chocolate-Tomato Chickpea Stew
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 tablespoons tomato paste
- 2 cups vegetable broth
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes
- 1/2 cup dark chocolate chips
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the cumin, paprika, and cayenne pepper and cook for 1 minute.
3. Stir in the tomato paste and vegetable broth and bring to a simmer.
4. Add the chickpeas and diced tomatoes and simmer for 10 minutes.
5. Reduce the heat to low and stir in the dark chocolate chips. Simmer for 5 minutes, stirring occasionally.
6. Taste and season with salt and pepper, as desired. Serve warm.
