Chorizo and Roasted Red Pepper Quesadillas
Ingredients:
- 2 chorizo sausages
- 1 roasted red pepper, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a combination)
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat a large skillet over medium-high heat. Add the chorizo and cook, breaking it up with a wooden spoon, until it is cooked through, about 5 minutes.
3. Add the olive oil, garlic, and roasted red pepper to the skillet and cook for an additional 2 minutes.
4. Place one tortilla on a baking sheet. Sprinkle ½ cup of cheese over the tortilla. Top with the chorizo and roasted red pepper mixture. Sprinkle another ½ cup of cheese over the top. Place the second tortilla on top.
5. Bake for 10 minutes, or until the cheese is melted and the tortillas are lightly browned.
6. Cut the quesadilla into wedges and serve. Enjoy!
