Chorizo, Patatas, and Pollo Skillet
Ingredients:
- 2 tablespoons olive oil
- 1/2 pound chorizo, diced
- 1/2 pound boneless, skinless chicken, cut into cubes
- 1 large potato, diced
- 1 red bell pepper, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chorizo and cook, stirring occasionally, until it is lightly browned, about 5 minutes.
3. Add the chicken and potatoes and cook, stirring occasionally, until the chicken is cooked through and the potatoes are tender, about 8 minutes.
4. Add the bell pepper, garlic powder, paprika, cumin, oregano, salt, and pepper and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
5. Add the chicken broth and bring to a simmer. Simmer for 5 minutes.
6. Remove from the heat and stir in the parsley. Serve warm.
