Cheesy Turmeric Rice

Ingredients:

- 2 cups of uncooked white rice
- 2 tablespoons of oil
- 1 teaspoon of turmeric
- 1 teaspoon of salt
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tomato, diced
- 1 cup of shredded cheese
- 2 eggs, lightly beaten
- 2 tablespoons of chopped cilantro

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the tomato and cook for an additional 2 minutes.

4. Add the rice, turmeric, and salt and stir to combine.

5. Add 2 cups of water and bring to a boil.

6. Reduce the heat to low, cover, and simmer for 15 minutes.

7. Remove the lid and fluff the rice with a fork.

8. Add the cheese and stir to combine.

9. Make 4 wells in the rice and pour the eggs into each one.

10. Cover and cook for an additional 5 minutes.

11. Remove from heat and let sit for 5 minutes.

12. Fluff the rice with a fork and stir in the cilantro.

13. Serve hot. Enjoy!
