Cilantro Chicken and Rice Bowl
Ingredients:
- 2 chicken breasts
- 1 cup cooked brown rice
- 1/2 cup walnuts
- 1/2 cup asparagus, cut into 1-inch pieces
- 1/2 cup artichoke hearts, drained and chopped
- 1/2 cup spinach, chopped
- 1 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons fresh cilantro, chopped
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts on a baking sheet lined with parchment paper. Sprinkle with cinnamon, cayenne pepper, onion powder, and garlic powder. Bake for 20 minutes, or until chicken is cooked through.
3. Meanwhile, cook the brown rice according to package instructions.
4. In a large skillet over medium heat, add the asparagus, artichoke hearts, spinach, and walnuts. Cook for 5 minutes, stirring occasionally.
5. Once the vegetables are cooked, add the cooked brown rice and stir to combine.
6. Add the cooked chicken to the skillet and stir to combine.
7. Sprinkle with fresh cilantro and serve. Enjoy!
