Make Cilantro-Lime Tofu and Salmon Chicken
Cilantro-Lime Tofu and Salmon Chicken
Ingredients:
-1 package of extra-firm tofu, drained and cubed
-2 boneless, skinless salmon chicken breasts, cubed
-1/2 cup diced celery
-1/4 cup fresh cilantro, chopped
-2 tablespoons olive oil
-2 tablespoons lime juice
-1 teaspoon garlic powder
-1 teaspoon ground cumin
-1/2 teaspoon salt
-1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the cubed tofu and cubed salmon chicken.
3. Add the celery, cilantro, olive oil, lime juice, garlic powder, cumin, salt, and pepper. Mix until everything is evenly coated.
4. Spread the mixture out onto a baking sheet.
5. Bake for 25-30 minutes, stirring halfway through.
6. Serve and enjoy!
