Cilantro-Mint Salmon Salad

Ingredients:

-1 lb salmon fillet
-1/2 head of cabbage, shredded
-1/2 head of brussel sprouts, shredded
-1/2 head of lettuce, shredded
-1/4 cup fresh cilantro, chopped
-1/4 cup fresh mint, chopped
-2 tablespoons olive oil
-2 tablespoons lemon juice
-Salt and pepper to taste

Instructions:

1. Preheat oven to 400°F.

2. Place salmon fillet on a baking sheet lined with parchment paper.

3. Drizzle with olive oil and season with salt and pepper.

4. Bake for 15-20 minutes, or until salmon is cooked through.

5. Meanwhile, in a large bowl, combine cabbage, brussel sprouts, lettuce, cilantro, and mint.

6. In a small bowl, whisk together olive oil and lemon juice.

7. Pour dressing over salad and toss to combine.

8. Flake cooked salmon into large pieces and add to salad.

9. Serve immediately. Enjoy!
