Cinnamon-Date Chicken with Sweet Potato and Pecan Pilaf
Ingredients:
- 8 chicken thighs
2 tablespoons basil pesto
1 teaspoon salt
1 teaspoon pepper
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 pint cherry tomatoes, halved
1 cup chicken broth
2 sweet potatoes, peeled and diced
1/2 cup candied pecans
2 tablespoons date syrup
1 teaspoon cinnamon
1/4 cup water
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 cup haricot verts green beans
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large bowl, combine the chicken thighs, pesto, salt, pepper, granulated garlic, and granulated onion. Mix until the chicken is evenly coated.
3. Place the chicken in a 9x13 inch baking dish. Arrange the cherry tomatoes around the chicken.
4. In a medium bowl, combine the chicken broth, sweet potatoes, candied pecans, date syrup, cinnamon, and water. Pour the mixture over the chicken and tomatoes.
5. Drizzle the extra virgin olive oil over the top and sprinkle with the minced garlic.
6. Bake in preheated oven for 40 minutes.
7. Remove from oven and add the haricot verts green beans. Return to oven and bake for an additional 10 minutes.
8. Serve the chicken and vegetables with the sweet potato and pecan pilaf. Enjoy!
