Citrus Carrot Turnip Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 cup diced carrots
- 1 cup diced turnips
- 1 cup diced butternut squash
- 6 eggs
- 1/4 cup freshly squeezed citrus juice (orange, lemon, or lime)
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add carrots, turnips, and butternut squash and cook until softened, about 5 minutes.
3. In a separate bowl, whisk together eggs, citrus juice, salt, and pepper.
4. Pour egg mixture into the skillet and stir to combine with the vegetables.
5. Transfer skillet to preheated oven and bake for 15-20 minutes, or until eggs are set and lightly golden.
6. Serve warm or at room temperature. Enjoy!
