Recipe: Citrus-Glazed Gilt-Head Bream with Roasted Potatoes and Tomatoes

Ingredients:
- 2 gilt-head bream fillets
- 1 orange
- 4 medium potatoes
- 2 tomatoes
- Olive oil
- Salt and pepper
- Fresh herbs (such as parsley or thyme)

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash and scrub the potatoes, then cut them into small cubes. Place them on a baking sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for about 25-30 minutes or until golden and crispy.
3. Meanwhile, prepare the gilt-head bream fillets by seasoning them with salt and pepper.
4. Zest the orange and squeeze out the juice. Mix the orange zest and juice together in a small bowl.
5. Heat a pan over medium heat with a little olive oil. Place the bream fillets skin side down and cook for about 3-4 minutes until the skin is crispy.
6. Flip the fillets and pour the orange mixture over them. Cook for another 2-3 minutes until the fish is cooked through and glazed with the citrus sauce.
7. While the fish is cooking, slice the tomatoes and arrange them on a serving plate.
8. Once the fish is done, place the fillets on top of the tomatoes.
9. Serve the citrus-glazed gilt-head bream with the roasted potatoes on the side. Garnish with fresh herbs and enjoy your delicious meal!
