Ingredients:
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 1 tomato, diced
- 4 eggs
- Salt and pepper to taste
Instructions:
1. Heat some oil in a large skillet over medium heat.
2. Add the diced potatoes to the skillet and cook until they are golden brown and crispy, stirring occasionally.
3. Add the chopped onion to the skillet and cook until it becomes translucent.
4. Stir in the diced tomato and cook for another 2-3 minutes.
5. Create 4 wells in the potato mixture and crack an egg into each well.
6. Season with salt and pepper.
