Coconut Chicken and Rice
Ingredients:
-1 cup of long grain white rice
-1 cup of uncooked pasta
-2 zucchinis, sliced
-1/2 cup of cooking cream
-1/2 cup of shredded cheese
-1 bell pepper, diced
-2 tomatoes, diced
-2 eggs
-1/2 pound of chicken, cubed
-1 cup of coconut milk
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large pot, bring 2 cups of water to a boil. Add the rice and pasta, and cook until al dente. Drain and set aside.
3. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the zucchini, bell pepper, and tomatoes, and cook until softened, about 5 minutes.
4. In a separate bowl, whisk together the eggs, cooking cream, and coconut milk.
5. Add the chicken to the skillet and cook until browned, about 5 minutes.
6. Add the cooked rice and pasta to the skillet, stirring to combine.
7. Pour the egg mixture over the chicken and vegetables, stirring to combine.
8. Sprinkle the cheese over the top, and transfer the skillet to the preheated oven.
9. Bake for 25 minutes, or until the cheese is melted and bubbly.
10. Serve hot. Enjoy!
