Make Coconut Chicken and Spinach
Coconut Chicken and Spinach
Ingredients:
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1 can (14 ounces) coconut milk
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
4. Add the spinach and cook until wilted, about 2 minutes.
5. Pour in the coconut milk and bring to a simmer.
6. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
7. Season with salt and pepper, to taste.
8. Serve over cooked rice or noodles. Enjoy!
