Coconut Chicken Curry

Ingredients:

-1 tablespoon butter
-1/2 cup diced carrots
-1/2 cup diced pumpkin
-1/2 teaspoon salt
-1/4 teaspoon ground black pepper
-1/4 teaspoon ground cumin
-1/4 teaspoon ground coriander
-1/4 teaspoon ground turmeric
-1/4 teaspoon ground ginger
-1/4 teaspoon ground cinnamon
-1/4 teaspoon ground cardamom
-1/4 teaspoon ground cloves
-1/4 teaspoon ground nutmeg
-1/4 cup shredded coconut
-1 cup chicken broth
-1/2 cup coconut milk
-1 egg
-1/2 cup diced cooked chicken
-1 tablespoon chopped fresh mint

Instructions:

1. Heat the butter in a large saucepan over medium heat.

2. Add the carrots and pumpkin and cook for 5 minutes, stirring occasionally.

3. Add the salt, pepper, cumin, coriander, turmeric, ginger, cinnamon, cardamom, cloves, and nutmeg and cook for 1 minute.

4. Add the coconut and cook for 1 minute.

5. Add the chicken broth and coconut milk and bring to a boil.

6. Reduce the heat to low and simmer for 10 minutes.

7. In a small bowl, whisk together the egg and 1 tablespoon of the hot broth.

8. Slowly add the egg mixture to the saucepan and stir to combine.

9. Add the chicken and mint and cook for 5 minutes.

10. Serve hot.
