Coconut Chicken Fried Rice


- 2 cups cooked rice
- 2 eggs
- 1 cup cooked chicken, diced
- 1 small onion, diced
- 1 tomato, diced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup coconut milk
- 2 tablespoons ketchup
- 2 slices of bread, toasted and crumbled


1. Heat a large skillet over medium-high heat.

2. Add the eggs and scramble until cooked through. Remove from the skillet and set aside.

3. Add the onion and tomato to the skillet and cook until softened, about 5 minutes.

4. Add the chicken, salt, and pepper and cook until the chicken is cooked through, about 5 minutes.

5. Add the cooked rice and stir to combine.

6. Pour in the coconut milk and ketchup and stir to combine.

7. Add the scrambled eggs back to the skillet and stir to combine.

8. Cook for an additional 5 minutes, stirring occasionally.

9. Sprinkle the toasted bread crumbs over the top of the fried rice and serve.
