Make Coconut Chicken Stir-Fry
Recipe Name: Coconut Chicken Stir-Fry
Ingredients:
- 2 chicken breasts, sliced
- 2 tablespoons coconut oil
- 1 marrow, sliced
- 1 head of lettuce, chopped
- 1/2 lb of meat (beef or pork), thinly sliced
- 1/2 lb of fish (such as cod or tilapia), cut into chunks
- 2 carrots, julienned
- 1 cup diced pumpkin
- 2 eggs, beaten
Instructions:
1. Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
2. Add the sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of coconut oil.
4. Add the sliced marrow and cook for 2-3 minutes until slightly softened.
5. Add the chopped lettuce and cook for another 2 minutes until wilted.
6. Push the vegetables to one side of the skillet and add the thinly sliced meat to the other side. Cook until browned, about 3-4 minutes.
7. Add the chunks of fish to the skillet and cook for an additional 2-3 minutes until cooked through.
8. Push the meat and fish to the side with the vegetables and add the julienned carrots and diced pumpkin. Cook for 2-3 minutes until slightly tender.
9. Push all the ingredients to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
10. Finally, mix all the ingredients together in the skillet and cook for an additional 2-3 minutes to combine flavors.
11. Serve the coconut chicken stir-fry hot and enjoy!
