Coconut Curry Ox Tail
Ingredients:
2 lbs ox tail
2 stalks celery, diced
1/2 cup Greek yogurt
2 tablespoons tomato paste
1 can coconut milk
2 tablespoons curry powder
2 cups mixed greens
2 cups bok choy, chopped
Instructions:
1. Heat a large pot over medium-high heat. Add the ox tail and cook for 5 minutes, stirring occasionally.
2. Add the celery and cook for an additional 3 minutes.
3. Add the Greek yogurt, tomato paste, coconut milk, and curry powder. Stir to combine.
4. Reduce the heat to low and simmer for 1 hour, stirring occasionally.
5. Add the mixed greens and bok choy and cook for an additional 15 minutes.
6. Serve over cooked rice or quinoa. Enjoy!
