Coconut Curry Rice Bowl

Ingredients:

- 2 cups of cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 can of coconut milk
- 2 eggs, lightly beaten
- 2 cups of cooked pasta
- 1 onion, chopped
- 2 salmon fillets, cut into cubes

Instructions:

1. Preheat a large skillet over medium-high heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the onion and cook until softened, about 3 minutes.

4. Pour in the coconut milk and bring to a simmer.

5. Add the eggs and stir until cooked through, about 2 minutes.

6. Add the cooked pasta and stir to combine.

7. Add the cooked rice and stir to combine.

8. Add the salmon cubes and cook until cooked through, about 5 minutes.

9. Serve the coconut curry rice bowl warm. Enjoy!
