Coconut Curry with Vegetables and Tofu
Ingredients:
-1/2 cup cashews
-1/2 cup coconut milk
-1/2 teaspoon curry powder
-1/4 teaspoon ground ginger
-1/4 teaspoon ground turmeric
-1/4 teaspoon ground cumin
-1/4 teaspoon ground coriander
-1/4 teaspoon ground cardamom
-1/4 teaspoon ground cinnamon
-1 tablespoon olive oil
-1/2 cup diced onion
-1/2 cup diced celery
-1/2 cup diced carrots
-1/2 cup diced zucchini
-1/2 cup diced cucumber
-1 cup cubed tofu
-Salt and pepper to taste
Instructions:
1. In a small bowl, combine the cashews and coconut milk and set aside.
2. In a separate bowl, mix together the curry powder, ginger, turmeric, cumin, coriander, cardamom, and cinnamon.
3. Heat the olive oil in a large skillet over medium-high heat. Add the onion, celery, carrots, zucchini, and cucumber and cook until the vegetables are tender, about 5 minutes.
4. Add the spice mixture and cook for another minute.
5. Add the tofu and cook for another minute.
6. Pour in the coconut milk and cashew mixture and bring to a simmer.
7. Simmer for 5 minutes, stirring occasionally.
8. Season with salt and pepper to taste.
9. Serve over cooked rice or quinoa. Enjoy!
