Make Coconut Lentil Curry
Coconut Lentil Curry
Ingredients:
- 1 package of extra-firm tofu, cubed
- 2 sweet potatoes, peeled and cubed
- 1 cup of white rice
- 1 cup of lentils
- 1 head of cauliflower, cut into florets
- 1 can of coconut milk
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of turmeric
- 1 teaspoon of garam masala
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the cubed sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and bake for 25 minutes.
3. Meanwhile, cook the rice according to package instructions.
4. Heat a large skillet over medium heat and add the lentils. Cook for 5 minutes, stirring occasionally.
5. Add the coconut milk, cumin, coriander, turmeric, and garam masala to the skillet and stir to combine.
6. Add the cubed tofu and cauliflower to the skillet and stir to combine.
7. Simmer for 10 minutes, stirring occasionally.
8. Add the cooked sweet potatoes and stir to combine.
9. Simmer for an additional 5 minutes.
10. Serve over cooked white rice and top with a salad. Enjoy!
