Kiwi Tangerine Chicken Stew

Ingredients:

-4 chicken thighs
-4 strips of bacon, diced
-2 short ribs
-1 tomato, diced
-2 cloves of garlic, minced
-1 onion, diced
-1 carrot, diced
-2 scallions, chopped
-2 shallots, diced
-1 bunch of asparagus, trimmed and cut into 1-inch pieces
-2 eggs, beaten
-1 cup of pumpkin puree
-1 can of coconut milk

Instructions:

1. Heat a large pot over medium-high heat and add the bacon. Cook until the bacon is crispy, about 5 minutes.

2. Add the chicken thighs and short ribs to the pot and cook until the chicken is lightly browned, about 5 minutes.

3. Add the tomato, garlic, onion, carrot, scallion, shallots, asparagus, eggs, pumpkin puree, and coconut milk to the pot. Stir to combine.

4. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.

5. Add the kiwi and tangerine slices and simmer for an additional 10 minutes.

6. Serve the stew with cooked rice or noodles. Enjoy!
