Coconut Curry Saltfish
Ingredients:
- 2 cups of saltfish
- 1 onion, diced
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 2 cups of shredded cabbage
- 1 teaspoon of black pepper
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric
- 1 teaspoon of curry powder
- 1 can of coconut milk
Instructions:
1. In a large pot, heat some oil over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomatoes, cabbage, pepper, coriander, cumin, turmeric, and curry powder. Cook for another 5 minutes, stirring occasionally.
4. Add the saltfish and stir to combine.
5. Pour in the coconut milk and bring to a simmer.
6. Simmer for 15-20 minutes, stirring occasionally, until the saltfish is cooked through.
7. Serve over rice or with naan bread. Enjoy!
