Coconut Milk Chicken Pasta
Ingredients:
- 2 chicken legs
- 2 cloves of garlic, minced
- 1 cup of cooked rice
- 1/4 cup of pickled onion
- 1/4 cup of tomato jam
- Juice of 1/2 lemon
- 1 stalk of celery, chopped
- 1 carrot, chopped
- 1/4 cup of chopped cilantro
- 1/2 cup of coconut milk
- 1/2 cup of shredded cheese
- 1/2 cup of milk
- 2 cups of cooked pasta
- 1/2 cup of sliced mushrooms
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken legs in a baking dish and season with salt and pepper. Bake in preheated oven for 25 minutes.
3. Meanwhile, heat a large skillet over medium heat. Add garlic and cook for 1 minute.
4. Add pickled onion, tomato jam, lemon juice, celery, carrot, and cilantro. Cook for 5 minutes, stirring occasionally.
5. Add coconut milk, cheese, and milk. Simmer for 5 minutes.
6. Add cooked pasta and mushrooms. Simmer for 5 minutes.
7. Add cooked chicken legs and cooked rice. Simmer for 5 minutes.
8. Serve hot. Enjoy!
