Coconut Milk-Poached Salmon with Spinach

Ingredients:

- 2 salmon fillets
- 2 cups fresh spinach
- 2 cups coconut milk
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the garlic and cook for 1 minute.

3. Add the spinach and cook until wilted, about 2 minutes.

4. Add the coconut milk and bring to a simmer.

5. Add the salmon fillets and season with salt and pepper.

6. Simmer for 8-10 minutes, or until the salmon is cooked through.

7. Serve the salmon with the spinach and coconut milk. Enjoy!
