Lamb Coconut Curry
Ingredients:
- 2 lbs. boneless lamb, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 (14-ounce) can coconut milk
- 2 large potatoes, peeled and cut into 1-inch cubes
- 1/4 cup chopped fresh cilantro
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the lamb cubes and cook, stirring occasionally, until lightly browned, about 8 minutes.
2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
3. Add the curry powder, cumin, coriander, turmeric, ginger, cardamom, cinnamon, salt, and pepper. Cook, stirring constantly, until fragrant, about 1 minute.
4. Pour in the coconut milk and bring to a simmer. Add the potatoes and reduce the heat to low. Simmer, stirring occasionally, until the potatoes are tender and the sauce has thickened, about 20 minutes.
5. Stir in the cilantro and serve.
