Coconut Oil Banana Bread

Ingredients:

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 cup coconut oil, melted
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 eggs
- 1 cup mashed ripe bananas

Instructions:

1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan with coconut oil.

2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a separate bowl, whisk together the melted coconut oil, sugar, and eggs.

4. Add the wet ingredients to the dry ingredients and mix until just combined.

5. Fold in the mashed bananas.

6. Pour the batter into the prepared loaf pan.

7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
